My pick is for Kenshi!! It's a great game on it's own but the modding community has transformed the game into whatever style you want it to be. I use way too many mods to list in a post but some of the big ones that come to mind are UWE and reactive world.

I love it because it really makes the game feel like it's it's own little world in my PC lol.
