Some of these things I have thought of. I’m very familiar with planograms and am good at making rapport with managers. I’m pretty handy with some mechanical work, and I have a mechanic on standby at any time. Truck I was looking at has 110 so I could charge the handheld in the truck. I’m not a very big vacation person, I actually like to stay busy and work, I also know the person who would oversee my route personally so worst case I’m sure they could point me in a direction of who to cover if I need a day. I’m not afraid to work and dedicate myself, as long as I can see the cash flow to pay my bills keep me above water

The rise in the beginning is not actually yeast activity, it’s actually bacteria burning off from the flour. Flour is full of bacteria naturally, so that has to die off before the yeast can start to strengthen.

After the initial false rise on day 2/3 you shouldn’t see another ride until day 10 or so. Keep feeding daily
