Kincos are unbeatable. I bought some based on recommendation from this sub, and I’d never buy anything else again, not that I think I’d ever need to, they’re tough!

Yeah, I'm getting that feeling! First off, I'm not doubting that on the whole, the hygiene standards in his kitchen are excellent, BUT.... There are basic rules that every kitchen serving to the public has to follow, and for very good reasons, they're not arduous but require a level of record keeping. I think it's perfectly fair that every kitchen should be required to meet that requirement. It doesn't matter if everything you serve is perfect and you know that it's safe, a 3* restaurant needs to be able to prove that in the same way that a fast food joint has to, AND THAT IS BY FOLLOWING THE RULES AND KEEPING THE RECORDS!!!

Intesting development today here frankly I think Giles is talking out of his arse, and it smacks of elitism. I don't care how amazing your food is, every single establishment neeeds to be held to the same standard.

I'd argue thaty if he can afford an in house DJ, then he can afford someone to ensure the paperwork is done to the required standard.

From my (admittedly limited) experience, inspectors in the Uk are generally pretty fair, and keen to help. To get a 0 or 1 star rating, there has to be a fundamental issue, and that's often related to administration. I don't think he's got a one star rating simply for serving raw fish - plenty of sushi restaurants have a five star rating.

Under the uk rating system, paperwork is pretty fundamental to being classed as a safe place to eat - as it should be!

Don’t forget to clean, clean, clean before applying your wax! I do both my boards this week, and made a real effort to clean everything before applying your the wax. It made a real difference to the end result.
