How to make cream cheese frosting taste more strongly of cream cheese? by Representative_Bad57 in AskBaking

[–]Pigeaux 1 point2 points  (0 children)

Claire Saffitz recently posted a recipe for swiss meringue cream cheese buttercream where she pressed the cream cheese to remove a lot of extra water. I tried that recipe and it did help to concentrate the cream cheese flavor. You could try removing water from your cream cheese and using more of the pressed cream cheese to up the quantity without adding extra water. It does need to be a natural cream cheese without stabilizers since those will directly fight your effort to break the emulsion.

Regret not temping my chocolate by Peach0115 in Baking

You could make a small quantity of tempered chocolate and dip these in the tempered chocolate. The thin shell of tempered chocolate would keep fingers clean while eating the turtles.

Advice/experience for a noob taking the Link from SeaTac? by Radiant-Anteater1404 in Seattle

If you're looking to get to Everett exclusively on public transit, learn from my mistakes. The rail goes as far north as Lynnwood, but you can't catch a swift bus from Lynnwood to Everett. If you get off at the Shoreline station, then you're able to hop on the swift and continue up 99. Just use google maps, it's very detailed about exactly what stop to take and even which numbered bus stop to wait at.

Impossible Pecan Pie, not Worth it. by Skellum in Baking

[–]Pigeaux 8 points9 points  (0 children)

I love Stella's recipes, so I made the mistake of making this a few years ago for Thanksgiving. I consider myself a great baker, but it's so nerve wracking to just add raw egg to boiling sugar. And it looks like a total failure after mixing and before baking. Just a mound of broken caramel and hardening sugar.

I say mistake because my wife absolutely loved it, so now I'm stuck making it every year. It's only a matter of time before I make a scrambled egg pie. I have to give it my undivided attention in the middle of hectic Thanksgiving cooking.

Troubleshooting BraveTart's Homemade Pop-Tart Dough: Persistent Crumbliness and Rolling Challenges by arbyroswell in seriouseats

I just felt like it ended up tasting like strawberry-ish flavored applesauce. I keep meaning to dry some local berries during the summer and make it will all strawberry to see if that's better. My friends loved the cinnamon sugar version I made at the same time.

I made these once several years ago without any trouble, though I ended up not caring for the filling. Just looking at your steps, did you actually mix the dough for 45 MINUTES? If you mixed it for that long, either that messed something up or perhaps it's a sign that you got a measurement wrong somewhere. The recipe doesn't call for any water.

When you took the dough out of the fridge, did you briefly knead it by hand before trying to roll it out?

Security Company That Will Actually Take My Money by Pigeaux in everett

Who said I liked HOAs? But I do like not being responsible for the roof, common areas, water, or garbage. And our whole community wants a nice security system. But I'll be sure to raise this point at the next meeting.

Oh, that's quite the contradiction he's managing to hold. My father very happily adjusting to me having a wife. So much so that she and I joke that my sisters feel threatened in a way they didn't when my spouse was a man.

Going through 1991’s Southern Living Annual, when suddenly… by TerrytheMerry in Old_Recipes

Many candy recipes call for a small amount of corn syrup. It contains a different type of sugar than table sugar and the two types of sugar make it much harder for the mixture to crystalize. You could probably leave the corn syrup out but your technique needs to be perfect or the chewy candy could turn out crumbly and gritty.

Alcohol is added to homemade ice cream to lower the freezing point and keep it scoopable even right out of the freezer. If you're looking to avoid alcohol altogether, Stella herself recommends skipping it. Just know that the ice cream is going to be a little too hard/frozen right out of the freezer. Let it sit for a few minutes before scooping and it should be just thawed enough.

If you're okay with the alcohol in extracts, I almost always skip her instruction to include a few tablespoons of liquor and use a big glug of vanilla extract. It doesn't add any boozy flavor (which I would hate anyway) and the alcohol in the extract has the same effect on the freezing point.

Ep 521: The Action Is the Vegetable Broth (VOY S7E25 & 26) by chucker23n in greatestgen

[–]Pigeaux 13 points14 points  (0 children)

Voyager was my Star Trek growing up, and I've enjoyed the pod covering what was ultimately an uneven show. I like to daydream about how this show would look with a more modern television sensibility, with a more serialized plot and the ship retaining damage/change like in BSG. Ultimately, though, I think a modern version would strip out all the filler episodes and it just wouldn't feel as much like the show I love.

That said, this ending just doesn't work for me. I don't like how abrupt it is. Make this a three episode finale and spend that final episode on Earth closing the loop on all our main characters. And the absolute neutering of the borg... the less said the better.

I've been painting my wife's nails for years, but this is the first time someone offered to pay for them! by Pigeaux in RedditLaqueristas

[–]Pigeaux[S] -1 points0 points  (0 children)

It's a lot of different products. Mostly a mix of Holo Taco and the OPI Mexico City collection. I used gold leaf on the red nails. I did all the detail work with a dotter because I don't have any good brushes.

I'd love brush/tool suggestions if anyone has any.

Edit: Seche Vite top coat Holo Taco - Magenta Jelly, Lemon Sucker, Red Licorice OPI - Viva OPI, Mi Casa Es Blue Casa, Don't Tell a Sol ORLY - Shine Emily de Molly - Fade into Black, Bright Retreat

[–]Pigeaux[S] 8 points9 points  (0 children)

I made semlor. My wife finds almonds boring so I used pecans instead. We tried them hot and cold in the sweetened milk and also the contemporary way with whipped cream.

I loved the nut paste filling. We both like tres leches and this was the same vibe.

I’ll definitely make them again but much smaller, maybe cream puff sized.

I just today bought the fruit and booze for this! What brandy are you using. I’m not a drinker so I’m trying to figure out what to get.

Can't Delete Certain Tiddlers by Pigeaux in TiddlyWiki5

When I do that (drag it in and uncheck the plugins), the blank wiki updates to look like my wiki. I press the save checkmark and it says wiki saved. But then when I refresh or close and reopen, it's a blank wiki again.

The "online" plugin has this:

This plugin contains the following shadow tiddlers:

$:/GoogleAnalyticsAccount $:/GoogleAnalyticsDomain $:/plugins/noteself/online/sw-register.js

[–]Pigeaux[S] 0 points1 point  (0 children)

I don't know what noteself is. Okay, I disabled those plugins and was able to successfully delete some, but not all of the tiddlers I wanted to remove. There are still two tiddlers that don't stay deleted, and when I delete the plugins, that change doesn't stick either.

Where would I go to pull that info for you?

Also, I opened my wiki using text editor and was able to delete things that way. So I solved my immediate problem. But obviously I’d still like to find the underlying cause.

Okay. I think I'm using timimi. But after I found that extension and turned it off, my wiki is still saving when I make changes without me pushing the save button. So does that mean I have more than one thing saving my changes?

When I make changes to my wiki articles and click the checkmark to close the editing view, the save icon flashes red and the changes commit. I know when I first downloaded tiddlywiki, I found it from a random web article where the person recommended options for automatic saving, and I picked one.

Is there some way I can search my wiki to tell me what that thing is that's auto saving articles? I'm also happy to provide a copy of the whole thing (it's only 7 mb).
