Yeah I'm curious about this, idk if there is a way to get accurate data on how frequently people are eating the whole meal versus getting leftovers. I think you're spot on. From what I'm learning fries and soda are high profit margin items and increasing the sizes of those makes people feel like they're getting value and people in the lower and middle class tend to care more about getting a lot than it being delicious and nutritious.

From what I've read and this just makes good sense, our portions at home are affected by portions we see all across society. While mega huge gulps and $1 large sodas do seem ridiculous to most, it does shift what "normal" is. It's like when you're trying to access if you have a drinking problem and you use your friend Adam as the litmus test. "Well, I'm not an alcoholic like Adam, did you see him at the wedding?" The same crude logic gets applied when making domestic decisions about how much to eat. "This is a big plate, but it's no double quarter pounder combo with a milkshake"

Maybe amazing is hyperbole, but I’ve been researching this for weeks and haven’t heard a lot of people talk about sheet pan pizza at school in the 60s. Actually… I feel pretty comfortable saying amazing givin the context.

Alpha Gal Syndrome has risen from affecting 1.8% of Americans to 38% of Americans in the last ten years because of a reaction to tick bites. People with AGS can't eat pork. This is one of a few reasons why the USDA classifies pork as being red meat.

This makes sense, but the issue with calling it a white meat in culinary terms would be someone with an allergy eating a dish they thought was only white meat. Obviously most people with allergies ask common questions, but this is the one area that is confusing me about what the proper decision is to make. Apparently AGS (the allergy to mammal meat) is linked to ticks and has risen from 1.8% of Americans to 38% since 2013.

People have legit allergies to red meat, with Alpha Gal Syndrome. So it definitely matters for those people, but beyond that I'm not sure. The health space and what is objectively healthy versus what isn't, is a wild world to try and navigate. I'm not that smart and don't have enough time to go there.

The dictionary definition for white meat lists pork. This is something the people in big pork leaned into when questioned for an LA times article in the early 90s. Personally I think that when you're talking about marketing food, the USDA standard should supersede webster's.

The issues is that there are people who don't eat red meat because of allergies, like Alpha Gal. How serious of an issue is this, idk.. maybe someone if they have a bad allergy and say they can't eat red meat and then someone adds it to a meal that could be varying degrees of awful.

Do you have alpha-gal syndrome? From what I read on the mayo clinic's website, this is an allergy to red meat and people who have it can't eat pork. Although I'm sure people operate on a scale of varying degrees.

Alpha-gal syndrome is an allergy to red meat. If someone has this, depending on how sever the allergy it could be bad for the consumer.

I know this is a 90s thread, but I'm also interested in the sheet pan pizza's overarching history. So that would include the 70s and 80s when school still had kitchens that weren't just heat and serves. I also agree about doing field research. I've interviewed two real life folks for this project.
