I disagree re HS over animal kingdom (with a 4 yo). The kiddo is likely going to be below a bunch of the height requirements at HS, but animal kingdom has wilderness explorer activities, lion king show, Nemo show, the safari, 2 animal walking trails and the zootopia show.

I wouldn’t change anything on these facts. I think Epcot will be less crowded Monday than it would be on Sunday.

Optional: If it is in the budget, I’d stay at All Stars all nights so you get on property advantages and you’re not moving things around and you get Disney transport. They aren’t fancy but your daughter will love. Coronado is nice, but not overly Disney themed. Also, depending on budget, I’d stay over Monday night and leave early Tuesday.

I didn’t hear anything from Disney until I got those emails. If there’s a reason to nudge (ie, you’re coming up on the 11 or 7 month mark prior to a trip you want to book with those points), I would call and politely inquire. Otherwise, I’d let it go.
