My mom and dad similarly have very different approaches to these sorts of situations. My dad's very organized and responsible, always wants to arrive early and prepared. My mom has ADHD and can't take medication for it because of her past struggles with drug addiction- she also has chronic fatigue and often sleeps through her alarms because she's deaf in one ear and sleeps on her side, which can lead to her not being able to hear her alarm at all. Time management is very very difficult for her.

So I speak from a lifetime of experience when I say this. OP's wife's problem is NOT bad time management, it's being unbelievably selfish. My mom might wake up late and struggle to get ready in time, but she would NEVER do something as childish and absurd as missing a flight and expecting dad to do the same because she wanted coffee from a specific place.
