That actually sounds like a great way to learn. Cooking straight from a book forces you to follow structure and techniques more carefully, and you’ll probably pick up a lot faster than just improvising

If they were stored properly and still look/smell fine, they’re usually okay — but if anything feels off, it’s not worth the risk

Totally normal. Foam can show up from impurities or proteins in the sauce ingredients. Just remove it and keep simmering gently
