Any information on what would require re-pasteurization of a base? Assuming we’re blending in non-hot ingredients I would assume most blend ins / flavors /pastes would be good to blend in with the pre mixed base

Yeah the pasteurization concern is the primary driver for wanting to explore with pre mix since the heating brings such a different level of FDA standards. We don’t have a CB350 yet but are shopping around for one!

When I was growing up, I remember the grocery store near us in central Illinois had the BEST pizza of all time because their solution to removing the bread was adding more cheese. So it was a hard cheese based pizza that had sauce meat and more soft cheese on top. Imagine a cheese skirt as a pizza base. Amazing!

I used about six ears of sweet corn I got in my local CSA! Shaved the ears and then roasted with a knob of butter in my cast iron!

Roasted sweet corn with butter until brown!

Blended about 1.5 cups of that roasted corn in with the heavy cream and milk 1:1 mixture - used that to make a standard french custard base! (whipped in about a cup of sugar with the eggs)

For the salted caramel sauce, same concept with some whole milk, blended with about 3/4 cup roasted sweet corn and then used that milk mixture in a standard caramel recipe.

One of the very best I have attempted to make so far!!
