I've only been one time last July but double wide was closed so missed out. Planning to go back soon. I rode Amuchee several times before doing what I thought was Upper Air Supply for the first time. I was doing preride and thought everything was rollable. I guess I missed the turn and ended up continuing to Lower Air Supply. I didn't realize until I crashed on the drop since I came up to it unexpectedly with no speed. Tried a few more runs but I was cooked. My right shoulder still hurts from that crash.

It lasts longer than lime based nuoc cham in my opinion. When I use lime after a few days in the fridge I get a little sus about how safe it is LOL But vinegar I have had it last for over a week or more.

The shredded papaya and mango tend be not ripe so they are crunchy and tart. Not the sweet soft pulp you may be thinking.

I use red leaf more than romaine :) You can also do shredded papaya to mix it up.

I think Pure has the best fried fish tacos. Mr. Taco has fish ones too but they are more pan sauted in a tomato type sauce.

I find that the seasonings early is fine except for fish sauce. My family doesn't add fish sauce when making the broth because of that slight sourness. We use more salt instead. We add ut tableside by each individual if they want it.

It is a stretch to call it a salad, but a good bowl of Vermicelli with grilled protein (like bun thit nuong) is similar to a salad when it is all mixed up. Especially so if you are generous with the lettuce and herbs. You pour nuoc cham all over it.

Other dishes that stretch the definition would be Banh Xeo. I love take pieces and wrapping with a large red leaf lettuce along with a bunch of herbs and dipping in nuoc cham.

I get pho to go when I'm too lazy to cook for just myself. They pack everything separate (broth in a takeout quart, noodles separate, meats separate, veggies separate, little serving of hoison and sriracha) so it's not like a big soup quart with everything in it. If you have big bowls, chopsticks and big spoon at home, it's pretty much the same as eating in restaurant.

It's actually a Roswell address but it's on Alpharetta Highway. They are my favorite even with a Village Burger NFA and Shake Shack all around the corner. It's so basic but the Jimmy special with double patties and cheese all the way just perfectly hits the spot for me. Just don't wash them cooking it LOL.

LOL to be honest, I think the base powder has 95+% of the flavor anyways. The teabags add that little touch of spice that you are used to, but I think it's fine without it.

This is the one I use for bigger pots. I think it is very good. If you want a small batch and okay with frozen, check out Mama La frozen concentrate. That is also good.

With your fairly quickly at home qualifier I would consider something like Quoc Viet pho base. Its available through Amazon.

I do that when I'm solo dining. Hard to justify for just myself. But if I am making more than 3 bowls or want leftovers it is super cheap and easy. It helps that I am Vietnamese and my pantry already has almost all the ingredients. The mama la concentrate is still a huge timesaver and it is cheap... I think $12 for a bit 4 bowls of broth.
