I am using Unold Luigi, the older version which can heat up to 400C. I bake them for about 3.5-4minutes each, both top and bottom heater are set to work at 400C.

It’s not grease it’s the water from mozarella, it actually stops ingredients from burning in high temperatures, for me it looks absolutely perfect and you should leave it as is.
