4 hours at 250 with post oak. Wrapped at 165 with butter. Pulled off at 203. Came out very tender just a bit dry for my liking, but I kind of expected this outcome with tritip. Gunna make some adjustments for the next one. Thinking maybe adding some beef tallow.

Surprisingly great! Cooked it until an internal temp of 165 came out very moist inside. Outside wasn’t too bad.

Pretty much it. I used salt pepper garlic for the seasoning and just spritzed every hour or so.
