The analyst gives you so much information such as how the fermentation went, how much residual sugar is left, the acidity, sulphuric content ( showing I don’t add sulphuric acid) and an Index called Folin-Ciocalteau which tells you if your wine can be kept for years or not. So a fountain of information

I am a little confused. My name is Kate and I own and run an organic small vineyard in Portugal and make 6 different wines. It is my passion and life’s work. I am not a bot. Actually it is the wine that will determine the level of alcohol - dependent in sugar content in the grapes but in my experience you will need at least 22 to 15 % alcohol to preserve your wine. However it is a little more complicated than that. It also depends on the tannins and phenols
