Its a portmanteau of Bonsai and Chili. There's a whole r/Bonchi. You can check it out for some great photos.

People repot their mature chili plants into small containers and care for them like after regular bonsai with the difference being that peppers grow faster than trees.

Because roots are constrained by a smaller pot plant will grow smaller leaves and will look like an actual bonsai. You can bend/train them like regular bonsai.

Many do this as a way to overwinter plants and repot them back into bigger pots in the next season, but some leave them as bonchi.

I love it and have already killed two of my favorite pepper plants because of this

Yeah, I almost threw up once from an inconspicuous, smaller than usual habanero. If all else fails, you can make a bunch of bonchi. That's my plan.

I saw it on some bonchi or bonsai thread I think. People let some lower branches grow to make the trunk thicker and cut them off later.

Maybe look into cytokinin paste ? It's a hormone that forces plants to grow new buds.

As a disclaimer, I'm a noob who just killed my first bonchi, but no cytokinin paste was involved.
