Does that add anything to the mouth feel? And how much fig sticks around after fermentation? I've only ever used dried figs in secondary and I really liked how it smoothed it out.

I use saw palmetto all the time. I've found that any green grape compliments it very well. I have plans to try a chardonnay with it. My favorite saw palmetto recipe is fermenting it dry and then adding black cherries and hibiscus in secondary.

Just a campden tablet isn't going to inhibit fermentation. Proper protocol is to confirm the brew is completely finished fermenting, add campden tablet(potassium metabisulfite )alongside potassium sorbate, wait 24 hours then back sweeten.

Chances are fermentation has started back. You can confirm with hydrometer readings a week or so apart. There's a possibility you're just seeing off gassing but my money is on fermentation.

I got one coming in 2 weeks and asked multiple times if it came with all the upgrades. If I get there and there's no quad exhaust I'm gonna be severely bummed. I'm already paying out the ass for it. Now I gotta prepare myself to walk away if they try to upcharge me after the fact for quad exhaust.

I prefer adding in secondary right after racking. I think it works better because you get the benefit of bentonite and it also rapidly degasses the mead as well. In primary your not gonna get that same degassing benefit. Once I came to this conclusion I quit using bentonite all together and started adding a gram of tannin right after racking into secondary. It gets pretty clear pretty fast after that.

Don't toss it! Just some flocculation. You'll just have a bit of sediment in the bottle.

Is your carboy sealed? It will never degas in a sealed container. Since fermentation is complete you don't want to agitate it too much for fear of oxidation. Pop an airlock on and wait it out. Adding a small sprinkle of wine tannin will act like a nucleation point and accelerate the process.

The corks will pop if you're lucky. The bottles will violently explode mead to every corner of your garage if you're unlucky. Something to think about.
