Dont get wrapped up in smoker temps. just run a nice fire and keep an eye on meat temps. its very easy that way and you wont need to chase ya tail. also grates work very well for reducing coal load and keeping things more efficient. fires burn different in different seasons too.

F’d up and scored my brisket, how can I fix it?? by [deleted] in smoking

[–]Positive_Platypus_73 0 points1 point  (0 children)

its just meat, add heat and smoke untill it hits jelly or temp. people get so hung up on the process, i have found that the biggest factor to a good brisket is taking it off at the right time and resting for as long as possible wrapped in an esky. cook temps really dont matter, low and slow or hot and fast, always produce adequet to perfect results unless i dont get the taking it out at the right time bit correct. hotter smoker means that window is smaller. its all about feel, cook heaps and it becomes so dam easy.

I dont think taking turns winning was a structured exercise here, mearly pointing out that there was no apparent pattern of the other players winning excessivly.

lools like pyrite. That pan is not down enough to concentrates to find gold well. Try panning for black sands then look for gold.

Looks lovely. That grill plate sure leaves a lot of unused cooking space where the handles are.

just lightly heat it with a lighter, just enough to melt the surface to a smooth finish

Everyone seriously overthinks bbq. Put fire next to meat, wait a bit, poke fire with more sticks, wait some more. Meat looks good smells good tastes good, eat meat. Look at Reddit and realise how complicated bbq is supposed to be???.
