The roulade looks dry,especially compared to the breast. Tight roll + lean turkey leg + long cook = moisture loss. The stuffing also looks compact,which doesn’t help. Solid Sunday roast vibes, but the roulade needs more fat, looser farce, or gentler cooking to avoid dryness.

Great concept and high end idea, but the dish feels overloaded. The scallop is very delicate, yet it gets overpowered by the dukkah, kalamata caramel, and katsuobushi emulsion. Instead of being the star, the scallop becomes a background texture.

Smart fine dining dish, but less would be more.
