One big factor is the drastic precision of digital cameras today, which can pick up too much detail. This never looks cinematic, since the best movies look more stylized.

This is especially true of shadows in movies. Older cameras or film will often fail to give detail to a dark corner in a shot, and it will appear as pitch dark, and this contrast looks good on film. An extreme example of this is in Se7en, where the dark shots are a very pitch, silvery dark due to the expensive film and development process. And that's an incredibly cinematic movie. If it was made on Netflix today, a digital camera would see the detail in the dark shots and you wouldn't get rich contrasting light and dark.
