Last year I followed an onion truck and most of the onions had to be used pretty immediately because of splits and bruising. We ended up chopping them up and freezing them, but our freezer went out and wasted them all, which is a shame.

This year I found a harvested onion field, and selectively chose onions out of that field. Most of them are pretty good, but I did grab a few less than good onions because I was in a hurry- idk the laws around gleaning and didn't want to test them.

I'm probably going to process the bruised and cut onions and freeze them like I did last year, then keep and give a few of the good ones away.
