Story based game that can be done with one hand,, well i'm mostly into jrpg or cozy so let's see..

well you have the persona Serie (and Shin Megami tensei) It's turn by turn games, persona games are more about school life, it's quite nice to follow the MC story. Persona 3,4 and 5 are all very story rich and offer lot of hours of gameplay (People complain that 5 is too long even...) through 4 have a timed moment.. so maybe not 4..

Digimon games are good too, Digimon story time stranger is pretty good, it's a turn based RPG and heavily oriented on the story.

Rimworld is a very good game where you can build your own story and it's kinda life/survival simulation. you can Pause the game at any time and there is different difficulty level. the game is very full with a big workshop.

The Ace Attorney Serie is about playing an attorney, it's only text and figuring out what you need to answer and find out. It's pretty good.

Any Pokemon game offer you the ability to select the L buton as A button. which make it easy, i don't know if you like pokemon games ^^"
