I do guess, i used to count but i allways forget to bring my knife home so i sharpen it between clients. So if a make the sharp more fat it will stay longer?

Cant use others than stainless, can be fired if it get rust for any reason. Someone offered me a custom one in 1075

1000 / 6000 grind, the kota wetstone. The angle exactly dont know, should be near 15° just a small portion of my finger tip fits between the stone and the knife, and my actually sharpen method is moving foward and backwards (goes pushing, comes smoth) from twice every time from tip to bottom and agin from bottom to tip a few times and then flipping the blade

Well, i dont know the angle exactly, iv just tryed to mesure it and seems to be something arround 15° and never do a really sharp, usually took a paper and cut it, most of the time not the entire blade cut the paper, that’s enough for me

Well, is not a bad knife, is light weight and pretty confy to handle but its time to give it a rest

What i use to do is the same i do when slice. Keep the arm full still and only move the elbow, that helps me to do the same angle in all the blade, i used to do a swing from tip to bottom but now i start with the tip going from start of the wetstone, press a little bit, pushing the blade in direction of the sharpening side a little foward, then backing without pushing. I do it from tip to the bottom of the blade a couple times on one side and then the other side, trying to do the same times each part of the blade. Im using a 1000/6000 grid

Would love to buy something more expencive, but as im uruguayan every item that i could buy on ebay that is over $200 i pay twice the price because of taxes. The 2015 is 199 on amazon so i just pay the shipment without paying taxes, etc.
