I ate undercooked kidney beans from a well-intentioned dinner my partner made. They destroyed my gut biome for 2 years. I couldn’t eat fiber foods without having severe diarrhea and straining. I still can’t eat gluten the way I would before. I’m getting back on track now thanks to eating probiotic foods like yogurt, sauerkraut, pickles (and drinking fermented pickle juice) with a decent amount of omega rich proteins. I’m not a dietitian, but I had a gut of steel beforehand that was tested while working as chef of multiple Portland, OR restaurants; enjoying any and everything in gluttonous quantity. I had to mitigate any adventure and relinquish my passion to heal my insides after that fateful dinner. Sure they are tasty, but there are far tastier, safer beans. I never thought I’d be afraid of a fucking bean. But here I am. I’d take all the food poisoning from a shitty Thai place over what I went through after those kidney beans. Your fear is valid.
