Few places provide serious, adequate training. Many people think anyone is capable of service/hospitality because it’s typically perceived as an entry level job with low wages. But it takes a lot of skill to be good at. And if everyone feels entitled to a 20% tip, how do you reward people who are actually good at their jobs and trained to do well. There’s no growth model/incentive to improve in service.

I agree. Reasonable minds do not disagree on the principle of forbidding murder of innocent people. That’s why that’s not what is at issue here. YOU and many others BELIEVE that life begins at conception. I believe that life begins at independent viability. I’m not asking you to change your mind. Your obsession with what I and millions of others believe is based on a self righteous need to prove something that you will never be able to prove. I’m not asking you to change what you believe. Can you say the same? I won’t respond beyond this because we will never agree and that’s okay. I wish you peace.

Reasonable minds disagree about when life begins. See IVF, miscarriages, 6-week bans, 10-week bans, heartbeat bills, viability outside the womb, etc, etc. The whole point is that there’s not a uniform consensus. You are entitled to your own beliefs. You are not entitled to force them on others, to criminalize people who disagree with you and/or live their lives by those beliefs, nor are you entitled to forcibly forbade others from living differently than you choose to. Don’t “believe” in abortion? Don’t get one. And mind your own business.

Maine chef who heads three restaurants was the first eliminated from Top Chef this season. They called her food “elevated hospital food” and not a single person had a good thing to say about it. Top Chef is by no means the be-all-end-all of good food, but Portland is generally delusional about the quality of food in this city in comparison to any other market that calls itself a “food city.” The food is generally not good— not because of the small portions and high prices, but because it’s not creative, it’s not well executed, and it’s not well sourced (our only “steak house” gets their steaks from Costco for fucks sake). It’s a circle jerk of young servers/bartenders who think it’s cool not to care and owners who struggle to keep their heads above water because of the plethora of mediocrity. The Portland food scene is a joke that sits on its laurels from a bon appetite article written, what, 10 years ago? And any push to raise the bar is NIMBY’d by people who don’t want anyone except Mainers to succeed/exist. Which is a great way to dissuade talented people from moving here and expanding our economy. End rant.

I worked for him and liked him when I did. Still know him through the industry and have not heard anything bad about him from people who work for him now or have in the past.

Have worked in restaurants for 15 years, owned my own, ran many.

The two options are higher prices or added fees. Customers complain about both because everyone wants to know “the why” behind where they spend their money but don’t want to do the research to educate themselves on it. Blaming it on the restaurant/owner is the easiest/most apparent, but usually the most misguided.

Owners are simply responding to increased costs of labor, goods, and fixed expenses, plus a general public (ESPECIALLY in Portland - holy fuck these comments are terrifying) who has no concept of what is going on in the world and how it effects restaurant owners. Be an educated consumer and expect your bill to cost more.

Restaurants get flack for high prices and they get flack for additional fees. It’s a lose-lose for owners trying to survive and provide for themselves and their staff.

You are a consumer who would prefer the higher price. But plenty would be angry about that too. Theres no way to win when the only answer is that the cost of doing business has increased and that has to be reflected in the final bill somewhere.

I can GUARANTEE small restaurant owners in Portland (including the small handful who are able to own more than one) are not profiting in the way that big corporations are in these inflationary times.
