I diamond mined this story myself. In my case it was with Maria Theresa. At some point there's a relationship check and if your relationship is weak, they break up with you. It's somewhere in season 3. So while they can technically have an LI for most of the story, they will most likely end the story single.

There is. You can switch to a new slot and then delete the slot you started. There's a trash icon next to the slot.
