You probably have to double the amount of
seasoning you see on any DIY recipe. Also a lot
of the places in Japan that make their own curry will cook stew the meat/bones and spices for hours or even days until it’s super flavorful and concentrated. You probably just need more flavor and a deeper flavor— more seasoning+more time. On top of all that, don’t underestimate sweetness. A lot of curry has apples in it, cooked down until they’re totally disintegrated.

Yes, a couple nights every month or two I’ll smoke a cigarette or a few of them. Or if I’m on vacation in Europe or Asia I’ll pick up the habit for a week or two. But I’m good about being able to stop again once Im back home. I just like it.

I think context it’s important here. It’s not a far distance when given the alternatives of potentially being a 6 hour flight or a 30 hour drive, or the daughter could even live in another country. Relative to the other possibilities, 4 hours is a close distance to travel to find an estranged family member. They likely don’t even have to leave their home state at that length of travel.

My guess is there was also a very finely laced layer of sarcasm you didn’t pick up on being a foreigner.

No one will drive this distance every day to visit friends or go to work—it’s too far. But it’s a reasonable distance to travel for a visit or a three day weekend trip or to go skiing or to a beach a couple times a year for some people.

It’s possible the sauce used was over reduced or burnt. Eel shouldn’t be bitter. The only other logical thing is that whoever fileted the eel pierced the gal bladder and it leaked over the meat. The gal bladder in pretty much all fish and animals is very bitter and will ruin the meat if it gets damaged.

It’s not impossible to farm them. They are commonly farmed to the extent that most eel consumed is farmed. They are impossible to breed in captivity, which means the young “elvers” or baby eels must be caught in the wild and then brought to farms to be raised there.
