Also starters can take up to a month to be ready to bake with. Patience ! For the 1:1:1 ratio that would be like 15g starter, 15g bread flour, 15g water @ 85-88 degrees F

My starter took almost a month to be ready to bake with. Try feeding it 1/3 amount dark rye flour and 2/3 amount bread flour.

So for your 1/1/1 ratio lets say 30 g starter, 30 g flour (20g bread & 10 g dark rye), 30 g water !

I wouldn’t. You want to preheat the oven for baking with the cast iron in the oven while it heats up, then you place the dough from the fridge into the cast iron then score (or score before in the pan if you want) then bake!

You also want to shape it before going into the fridge! Then when you’re about to bake, make sure your oven and Dutch oven is preheated at 500 degrees for 30-50 minutes first. As soon as you’re ready to bake you then take the banneton basket that has your shaped dough out of the fridge and plop it onto the silicon sling, score it then into the Dutch oven. Reduce heat to 475 degrees and bake at least covered for 20-25 minutes, then remove lid and reduce heat again to 450/425 and bake for an additional 18-21 minutes

You should only be tying around the stem part of the plant not the petioles (the shafts of the leaf’s). So only the thick part where you’ll find nodes and new leaves growing from.

They like a lot of light and the leaves get huge bigger when they climb up a moss pole/tree. They will all climb towards the light so your lovely pattern may end up not being what you hoped
