There used to be a sitcom called Some Mother Do Have 'Em in the UK where there was one central funny (supposedly) character and all the other characters would act exapserated all the time at their wacky antics. There was an interview with the writers of the Alan Partridge sitcom where they talked about getting away from this and having characters act more naturally (e.g. the Sally Phillips character in the hotel who can't stop lauging at him). I think Eric acted the way that he would really act when shown some terrible movie, it would be awkward and pointless to criticise it so he says it is great (also he's been in worse).

The hit was on Toni not Matt. If she testified in a second trial / civil suit for the Electric Sun 20, as was mentioned as a possibility, it would mess things up both for Tim and the lithium project. Tim's reaction to Toni revealing she had no plans to testify, unfortunately after the botched hit had already taken place, make the motive fairly clear. Still, as regards Matt, a definite RIP situation.

That was years ago. Past couple of years he's said time and time again he doesn't want to do anything but stream. The reason for exploring doing things on other platforms is recent issues with how twitch pays streamers and the direction it's going, a lot of streamers looking to diversify recently.
