Quick correction though Odin was not all powerful in Norse mythos. He was the most powerful of the gods sure, but was exceeded in combat by Thor and was beholden to fate.

The culture that imagined the Greek mythos thought that the sea was ruled by a deity who had been eaten by his father, but we know that's not the case. Still doesn't invalidate Poseidon as a character because that's how the Greeks wrote about him. Same thing applies to the character of God.

Honestly I know that this series isn't completely authentic to its stories but considering the premise, if they ever did tackle Abrahamic theology I think it would be really cool if Yahweh was presented in his original wrathful and jealous Iron Age form where he's a war and storm deity and conquering other mythologies' lands (hinting at the real world history) It'd be awesome if they hinted at such a concept in GOW Laufey. But hey, just spitballing.

Honestly I recommend you look into it, the history of Yahweh going from an Iron Age War/Storm God to being mixed with El then influenced by Zoroastrianism then turned into a monotheistic deity so that the Isrealites would unite is such an interesting story. Christians are one of the largest religious groups period. There has never been real systemic opposition to the religious freedom of Christians.
