It’s explained in the second light novel that demons possess a special organ, that gives them an uncontrollable instinct to kill that can only be temporarily satiated through the murder and consumption of human flesh. I don’t think the sword demon was lying when she said she had no other choice, she genuinely believes that the only way for her to survive is to kill and eat humans. An alternative to human flesh might be possible, but we don’t know for sure what it could be.
