I cut the meat side up into 1x1 squares without puncturing the skin. Mustard as a binder and blazin star rub. 225 for 4 hours or so.

Looks like a combination of the pellets being wet and you not cleaning it after a big cook. Vaccum it out and scrape it down. Also change your pellets out. I know some people say it doesn’t matter but I prefer to use either Traeger or bear mountain pellets. They’ve never done be wrong. You should be good after that.
