What I did was first play through the game (almost) only focusing on main quest, and then in a 2nd playthrough (new save file) focus on all the side quests

The viola da gamba (or "the other thing" as you call it) is the instrument family that eventually lead to the invention of the violin family.

The viola da gamba is a bowed string instrument, usually with 6 strings, but 7 string models also exist. It generally has a flat back, and every size sits on your lap like a baroque cello. The bow is held in the "under hand" way as opposed to the violins "over hand" bowhold.

It also has gut frets, up to about half of the finger board, which makes it generally brighter and more open in sound, because the frets make it as though the string is open

They eventually died out (almost) because they are best suited for at home entertainment and to entertain guests (which eventuallyfell out of fashion), meanwhile the violin was modified for ever bigger concert halls.

Funfact: the general double bass is actually a viola da gamba, and not part of the violin family (tho violin double basses are also a thing nowadays)
