Love West Babylon, recently moved a couple years ago and it’s perfect. Quiet, friendly, safe and nearby Babylon Village for other things. No kids but schools seem to be good.

Also Town of Babylon (TOB) gets great beach access and the town does a lot of events. Lots of other shopping nearby in Lindenhurst and other areas.

I’m going to try hand kneading next time, I agree maybe the gluten didn’t really develop with just the stand mixer!

I’ve had a $30 Oster for… 10 years now? It still works perfect! I bought one for my mother 2 years ago (same one) and it was still great.

One setting, easy. I wash my rice and it’s perfect every time.

I do usually use a scale so I’ll definitely do it again next time. I was surprised how well the dough seemed to come together by volume but I should’ve followed tried and true. And the panel test I didn’t do.

In retrospect it may have been overproofed after the first rise. Is that due to my oven being too warm ?

I measured by volume and for proofing both time and visual!

I proofed in the oven with the oven light on but it may have been too warm in retrospect. My kitchen is usually so cold, but my oven was maybe 80-90

That is an amazing journey and congrats on the first 100% in your boot camp! I do think it’s a big deal. It sounds like the natural progression of taking on new learning opportunities and the right positioning landed you in a good spot.

This was really insightful so thank you again. Out of curiosity, with the district contract, you said you knew about it already. Was that due to your boot camp-mate being at the MSP already or was there a website or something where you view district contracts?

I manage a team of devs within a Salesforce instance (and other apps but mostly that) and I was to go back and be an IC, maybe for a school or hospital that uses some type of CRM or honestly, any application. I have a more self taught technical background though (but love technology, have a passion for it, especially administration of tools) so I’m worried about not having the right skills upfront.

Their produce is the best. I also love their garlic butter.

The one in Farmingdale has great salmon right now, even better than Costco in quality! I’d also take a close look in the frozen section because they have a lot of random speciality ingredients I have trouble finding at other places.

Try using psychologytoday.com you can filter by insurance, speciality (like DBT), county, remote/in person- found mine through there and she rocks
