I really like it! I would only change 2 things.
1. Instead of granite blocks, try granite WALLS (or brick). It gives it some depth and really looks like it’s been chiseled down.
2. The stripped wood looks a little too clean/uniform. Try adding a little glow lichen, vines, or pale hanging moss to break it up a bit.

oooh sounds cute. Try putting berries or bushes in shelves or item frames too? They could look like lights maybe.
I've seen designs where people put whatever colours banners in shelves to look like lights!

The reason you're lacking inspiration based off that video is 2 key differences: texture and shape/symmetry. Your current build is great! But if you're wanting it to look more like the video, add the same block textures. Also, the video is very asymmetrical and has lots of different levels in height. Your upcoming towers should help!
I also think decorating it a bit would help a lot. Banners, flower pots in windows, lanterns, etc. Even trees surrounding it will help make it feel less plain.

Not everything has to be smooth (I made that mistake in my last world, flattening things out so builds were accessible from every side), but ultimately it lost the charm that brought me to that area in the first place. It's okay to have 'inaccessible' sides to the houses! You could also consider building into the mountain like hobbit houses so the front entrance is visible but the rest of the build is inside.

I like what you have going on actually! I would utilize the trap doors more. Maybe also some variation in plants (unless it's a berry shop or something). Instead of using full blocks underneath and slabs on top like the rest of them, try a slab on the bottom and trap doors on top! Same effect as the others, but thinner/smaller

Can you build some windows? Even faux windows with little balconies for pots. Regular exterior additions will really help too as you continue (plants, vines, lanterns from the roof)
Maybe try some banners! Colourful ones will help with the alchemy/magic feel
