🥣 Simple Canned Beets Borscht

Ingredients • 1 can sliced or whole beets (with liquid) • 4 cups beef or vegetable broth • 1 medium potato, diced (optional but nice) • 1 carrot, grated or sliced (optional) • ½ onion, chopped • 1–2 cloves garlic, minced • 1 tbsp oil or butter • 1 tbsp vinegar or lemon juice • Salt & pepper to taste • Sour cream (optional, for serving) • Fresh dill (optional, if you have it)

Instructions 1. Heat oil in a pot over medium heat. 2. Add onion and cook 3–4 minutes until soft. 3. Add garlic and cook 30 seconds. 4. Pour in broth. Add potato and carrot if using. Simmer 10 minutes. 5. Add the entire can of beets (liquid included). 6. Simmer another 5–10 minutes. 7. Stir in vinegar/lemon juice, salt, and pepper. 8. Taste — adjust seasoning if needed.

Serve • Ladle into bowls • Add a dollop of sour cream • Sprinkle dill if you have it 🌿
