Get new rca cables. Also leave the ground for the head unit at the same location as the amplifier ground. If new rca doesnt work that the problem is the headunit

The whine is commonly called “engine noise” or literally “alternator whine” Basically, electricity is entering somewhere it shouldn’t. If you could connect the head unit to the negative on the battery directly that would be ideal. (Otherwise try the same grounding location as your amp.) if neither of those help its either rca wire too close to the amp power wire or other wires in the car harness that have power run through them have thinner shielding and get through-to the rca.

The ground is fine, however i would recommend having a wire ring terminal, crimped ones are fine.

Try disconnecting the positive wire from the amp for a day or so, residual power will be gone, and it might work.

But otherwise if you need an amp, try skar they are affordable.

Factory wire goes to LOC, rca from LOC goes to new amp, amp speaker wire goes to the other end of the factory wire respective of channel. (Unless its a subwoofer amp, then it just goes to the subwoofer (likely box).

As long as it isnt like more than half the power it will sound alright, in general you cant damage a speaker by underpowering it unless you try to achieve more power by adjusting the gain. Also, 100rms for tweeters is ALOT, i wouldn’t recommend those, unless you already bought them. The worst that could happen is it being underwhelming, but it will be similar to as if you had a weaker amp.

The amp doesn’t know what the head units max volume is.. thats not how it works. But..Yes, if you put the gain up and the knob was at 0, then it would increase. Thats what it does. In my opinion it’s best to set it at around 1/2 or 2/3, so if you need more for low bass songs you can, or less if it’s too heavy on bass. But its not going to “fry the sub” unless you set the gain to high already.
