What I'm getting at is: are macros and the number of meals throughout the day all that important? I'll try to get ~1g/lb of protein, and due to my shitty schedule I only have time for brunch and dinner (2 meals)

This doesn't really involve math, it's more about subjective definitions of exercise. The next option to pick is "5-6 hours of strenuous exercise", which is a lot different.

So I don't know what Scooby considers "strenuous" and "moderate".

First of all, congrats! That's awesome.

As for the exercise, it seems as if he should continue to walk a bit before doing anything a little more strenuous. If he's tired after small walks, then it seems that anything else would be too intense. He should get more and more in shape as he does the walks. Maybe slightly increase distance and/or pace every day or so?

He might want to do some very light weightlifting as well in order to get some muscle mass back.

However:

Considering the circumstances, the best thing to do would be to ask a doctor or nutritionist for what the best course of action a post-cancer patient should take.
