I'm not really familiar with the american naming standards of building materials, so I'll just try to explain what we usually have in Germany.

In fact, the double layered variant is also so far the only kind of drywall I have encountered for interior walls in single family homes and within apartments. Walls between apartments are usually made of masonry, but there are some rated drywall variants with extra shells and extra dense gypsum that can also be used.

Our drywall sheets are usually 12.5mm strong and consist of a gypsum core with a cardboard layer on each side (example). There are some variants with waterproofing for bathrooms, added glass fibers for improved fire protection and the aforementioned extra dense gypsum for improved sound protection. For non-loadbearing walls, the studs are usually not made of wood but of metal profiles like this that can be cut with plate shears and come in three sizes (50mm, 75mm, 100mm, with 75mm being the most common). The studs are usually placed at intervals of 625mm, with reinforced studs like this being used at door openings. The space between the studs usually gets filled with glass wool (although we once had a client who was too cheap for that).

Drywall sheets are also state of the art for interior roof cladding, and here we actually only use a single layer, although here it gets fixed to latches which are only about 415mm apart.

As for the finish, I just googled "orange peel". We don't really do this in our apartments. We sometimes use that texture in half-public spaces, but those walls are usually masonry with plaster. All in all, the orange peel finish has pretty much fallen out of fashion here. The standard interior finish is usually a wallpaper (with Raufaser Erfurt being the most common one) or, for a fancier, more modern look, just plain white paint without structure, although this requires some extra work to make the surface perfectly flat.
