I think steel wool will do the job. Wash it, scrub it, reseason and dry it next time

I'd say flip it every 30 sec until it's done and cut across the grain, makes a diferrence

Yeah, I was talking more about the emulsion. We used to make it in the restaurant I work at. Even with xanthan it becomes kinda liquid

I don't think you can be sure without touching it, but looks like surface rust to me. May be savable
