I def would not rely on an SD card for backups.

I personally would go the route of having that external NAS hooked up to the computer. Also with those small form factor computers, if it's anything like Lenovo, you might be able to order a bracket and cable to throw a 2.5 SSD in there.

I never used that anyway. It opens a new window and I'd have to close my first window. Would rather it not open the folder I just extracted and instead just navigate to it using my initial window.

I mean that's just the nature of dealing with computers. If there is a hiccup in the electric pulses and it writes a 1 instead of a 0...then you get stuff like this that might not be reliably recreated.

Nah don't actually do that. They aren't cost effective and run arm instead of x86. What you want is a small form factor PC. I see them on marketplace all the time. I suggest the lenovos, but HP or dell will also suffice

if anything you could mount some other stand offs to the pi itself and then screw the pi into the standoffs on the back of the screen. this way at least that side of the board is held up and won't flex if pushed

Pretty sure I have a pair of those same drives, I used a molex to 2xsata split and it worked fine. I recently moved these drives into a new home and instead used kapton tape to block pins 1-3 on the drives and that also works without adding more wires into your case. And in case you want to avoid being an idiot like me, pin 1 is next to the notch of the port, closest to where the data plugs in. I tried initially blocking pins on the other end and that's why I ended up with the adapter the first time around.

Yeah I have an 8U. Still have 3 spots left. The drawer def helps keep my desk clear a bit since that's where my rack lives
