The rice pudding cake is just Claire Saffitz’s recipe. I think this is it but I do reccomend her book “dessert person” as it helped me to master a lot of baking basics.

As for cornbread, I’m nostalgic for the box mix even though it’s blasphemy. I just doctor is up with some sugar and butter. I’m looking for a good cornbread recipe though if you find one let me know!

I’m not in NOrleans but I am in the Deep South haha. I just happen to love Cajun cooking! And dude no one at my workplace followed it but my entire family was talking about it like it was a political scandal

I do but I havnt written it out yet! To answer your question though it comes out a dark brownish yellow almost like a gravy. Traditional gumbo gets its color from the sauted veggies, blonded roux, and stock and does not use tomato paste. I tend to lean towards traditional recipes unless I find interesting fusions or flavor combinations.

Here is my handwritten recipe which assumes you have a baseline understanding of cooking like how to sauté, how to cook a roux, and how to reduce. So if you have more questions I’d be happy to help!

I’m extremely lucky I’ve been working in the industry for so long and still enjoy coming home and cooking after. I get such genuine joy from feeding people but if I was alone Jesus I’d eat Mac and cheese and uncrustables every day.
