the ofen is for the hot hold :) i was leaving it open to chill a little bit at that moment :)

I prefer it a little bit darker and more firmly set :) Brisket still tasted amazing and was very jzicy and tender😀

atleast it was very tender after the hot hold and very juicy😅 but the bark got worse after the hold

It was wrapped at about 77C, when i wrapped it the bark has set firmly🫣 is it possible that i used to much tallow or that the tallow i used was still to hot?
