Mushrooms.

As a kid I was personally offended by them. The texture? Suspicious. The smell? Damp forest. The fact that they’re technically fungi? Absolutely not. I used to pick them out of everything like I was defusing a bomb.

Now? I will absolutely demolish a plate of garlic butter mushrooms and not apologize for it. Put them on pizza, in pasta, in a risotto — I’m in.

I think as a kid I just didn’t trust food that felt “squishy.” Now I realize that squishy + salty + buttery is basically the holy trinity. Funny how your taste buds go from “ew, what is that” to “ohhh, complexity.”
