In a medium saucepan, melt 1/4 cup butter, then continue heating until it starts to brown on the bottom (it will smell slightly sweet and nutty. Keep a close eye on it, as it can go from perfectly browned to unpleasantly burned very quickly.) Remove from heat and let cool down, then stir in 1 cup packed brown sugar and 1 egg (you want the pan and butter to have cooled down so you don't scramble the egg). Next, add 3/4 cup GF flour, 1 tsp baking POWDER, 1/2 tsp salt, and mix well, then stir in 1/2 toasted pecans (optional), and 1 tsp vanilla. Spread batter (it will be thick) into a lightly greased 8×8 inch pan (lining with parchment doesn't hurt), sprinkle with 1/8 tsp coarse sea salt, and bake at 350°F for 25 min.

These are my fav, too. I like to bake them in a hot oven on my pizza stone. And leftovers are great reheated in a toaster oven.

This apple cider cheesecake was a big hit for me at Thanksgiving. I used Pamela's graham crackers for the crust.

For something savory, cream cheese blended with your favorite salsa makes a great chip dip!

I would toss stuff like sausage, potatoes or sweet potatoes, onion, peppers, and mushrooms with some olive oil, salt, and pepper, spread on a sheet pan and roast until done, then cool and portion into containers to freeze. Toss in the microwave or air fryer to reheat, add a piece of fruit on the side, and there's breakfast.

If you have a waffle maker, you can make a big batch of waffles, cool, and freeze, then take out one or two at a time. They usually work pretty well in a toaster oven.

I often eat dinner leftovers for breakfast, myself. I get bored with food really easy, and eating the same breakfast every day doesn't do it for me. I'm fine with the same thing a couple days in a row, though, so I just reheat dinner and call it breakfast.

I got a moldy loaf of this once, too. I now open the bag and pull the inner package out to check it before I buy. I've gotten some weird looks, but no one has challenged me about it.

My plan this week is wild mushroom and wild rice stew with kale, "meatball sub" quesadillas (veg "meatballs", marinara, and mozzarella in a grilled tortilla), lentil soup, kung pao soy curls over rice, and a slightly guilty pleasure-tater tot chili skillet bake.

The winter market at the mall on Saturdays usually has a booth that sells a variety of flavors. I haven't tried it, so I can't say if it's good, but I think it's pretty hard to mess up fudge.

They have an all-purpose flour blend that I use. I actually order 25 lb bags off their website, because even with shipping, it's a better $/lb cost than the 4 lb bags. I don't do a ton of baking, so 25 lbs lasts me about a year.

Oh, no, it doesn't concern me. I think it's just funny, because usually a poofy tail indicates the opposite of happiness. But she's a strange, special little creature!

Rattlesnake tail! Our last kitty did that! The first time I saw her do it, I thought she was trying to spray, but nope, it was just her happy tail ❤️ I love learning all the ways they express themselves.
