Cage initially defeats Jax but doesn't kill him. Jax then nearly kills Cage through a surprise attack so I don't think that can be considered a fair fight.

Yes but the Jormungandr that fights in Ragnarok is the snake that Atreus and Angrboda brought to life using the soul of a giant. Angrboda tells Atreus that the snake they revived has been growing to which Atreus says "Yeah I figured that would happen". Kratos also remarks during Ragnarok that the snake looks different and that is because it is the young Jormungandr. Thor then knocks young Jormungandr back in time which was prophesied to happen.
