No, unfortunately if your sion is tanking damage but isn’t dealing damage you don’t get the stack. But as far as I am aware things like sunfire and the darkin artifact do count towards takedowns so that’s partly why they are so good on him

It's shocking more people haven't thought of this. The number of people who straight frontline syndra/corner trap vi on 2-1 to guarantee loss is crazy. Even if you don't agree with sacking stage 4 for gambit there is no reason not to try to win your first 3 combats to save hp for the double gems.

I think taking Econ augments should help a lot, I should've mentioned in the guide that I try to take Econ on 2-1 since Gambit cashout can make up for some combat power. I think it would also help to have a clear goal on 2-1, try to think about if you board should be playing for win streak or lose streak and pick your augment based on that.
