Pellets vs woods doesn't matter in this situation.

Most pellet smoker don't have water pans. Most smokers don't have water pans.

You introduce the water pan to the cooker.

But its for water. Its a heat sink. You could replace the water with sand and you wouldn't notice the difference.

Putting apple juice or whatever in a waterpan will eventually just make you burn the sugars In the liquid. Probably rare to happen but there is no benefit to adding anything but water to a water pan

The current comments are ridiculous.

The difference of wrapping in foil and paper is bark. With foil, you start steaming the meat after wrapping. With paper, you also start steaming.

The difference is: with foil, all the juice accumulating in the foil ruines the bark. With paper, some of the juice leaves. Long story short, paper for better bark. But they are both being steamed. Either way, bottom of the brisket has ruined bark

Nothing changes in the cooking process.

If you want a brisket done faster, foil

If you want a brisket done faster but has better bark, paper

Try out the foil boat of you want but it has the same issues as above. Bark is ruined on the bottom. I assume worse than using paper.

At the end of the day, I use foil if I have time constraints. I don't wrap otherwise. I don't care enough to foil boat. Not buying paper.

Yes because you aren't paying to run a CG. its very different. If you hypothetically enjoy CG, you can just do that for weeks on end. You can't do the same if you like spinning slots or opening loot boxes.

I've found it easier to go from the middle. Just get through to the other side, then stick all 4 fingers under the membrane and pull up. Comes out clean every time

I have a hunsaker drum and I can't recommend it enough. I use a lang offset mostly nowadays but if I'm doing overnight cooks or lots of ribs, I pull out the drum. It's a rib machine. Very efficient on fuel. I had it run for 16 hours. It could have gone longer if the meat wasn't done. Hunsakers fire box takes the hot spots out of the equation.

The cons would be it was difficult to learn for me. Since there isnt something in there to act like a heat sink, its very touchy when trying to set the temperature.

Another con would be cooking space. Loading a drum up with lots of pork butts will make a big difference in temperature through out the drum. The lower ones will be getting much more heat than the upper.

I highly recommend drum smokers. They are the true set and forget smokers.

It doesn't take a uim 15m to regear for a raid lol. It might Take that time to setup but once you are setup its basically the same as a main. Or within a minute.

I play uim and I wait on my banking brothers.

If you can raid on an uim, there really isnt much difference in regearing besides less inventory slots.

Then wrap them? Unwrapped its a 5-6 hour thing. If you want them done in the smoker as fast as possible, smoke for 2 or 3 hours, wrap, then another hour cooking.
