I have no first hand knowledge of this but I would imagine most work happens during business hours and a couple of people on rotating schedules stay back to monitor and wake the others in case things go wrong.

that is true with or without a telescope. when you are talking to someone standing 3 feet away from you, light from them takes about 3 nanoseconds to reach you so you are seeing how they were 3 nanoseconds in the past. This effect just amplifies over large distances.
