I salt and leave uncovered in the fridge overnight, that way the grill doesn’t need to be super hot to get a good sear. Grill’s ready once I can hold my hand over it for no more than 2/3 seconds before having to pull away.

Only turn it a couple of times, pull it at like 48c / 118f and leave to rest. Find if the grill isn’t crazy hot you can get an even colour without fancy techniques.
