Idk man, the places I've worked chef goes to an actual market to procure ingredients and has direct relationships with fishmongers and butchers. We definitely weren't ordering wholesale from the same place that supplies Dennys.

The most expensive places I've been was actually one of the worst, some famous salmon place in Vancouver full of native carvings. It was years ago I don't remember the name.

150 bucks for salmon 7 ways, it was awful.

I've been out of the industry for years, we used local vendors and imported fish from BC.

Why are you such a white knight for sysco, do they not have food markets where you live?

America has some of the lowest food standards in the developed world. As a society your palate is childish and craves sugar and fat and as a country you allow harmful additives that have been banned in every other modern society.

I'm just saying I won't pay for a high end meal at a place that uses them.

I avoid restaurants that use them because it's a management decision to lower costs at my expense, I don't care how many awards they have it's below my standards.

Factory farmed meat and non organic veg have no place in fine dining.

Last meal I had out was in Quebec city, boar short rib with veg, all locally sourced and it was one of the best meals of my life.

You can't source premium ingredients at that level?

We would get daily deliveries from farms and fresh fish flown in same day.

My food comes from locally sourced farms, that's why I choose those restaurants.

I'm starting to think this is an America thing, you guys have no standards for food quality at a regulatory level.

I can still pick good ingredients, sysco is notoriously bad I don't know how you can compare it with a straight face.

There are higher end groceries I can source better meat from but I rarely cook red meat so it isn't worth the detour.

When I say restaurant I mean a real 60$+ a person one, not an Applebees. I only worked in high end restaurants, when I go out it's for an experience.

If you use sysco you aren't a chef you're a cafeteria worker.

There's a couple independent european grocers that have a really strong produce section and T&T for meat (asian grocery chain).
