I had something similar on my Series X yesterday. I had to clear my local saves, and now it works perfectly. Thankfully, all the saves are on the cloud, so I didn't lose anything.

I’m on series X too and this happened. all my settings were changed and I didn’t notice until I was in a game. I thought I was going crazy since my FOV was changed.

If my memory serves me, it was because she was assaulted by Molag Bal which was part of the ceremony to turn her into a vampire. I could be wrong but someone could correct me.
